Ian has been doing low carbs, it was starting to get super expensive and I was sick of making dinner every single night. One day we were talking about it and I said we needed to start making casseroles again, they make meat last longer and make it where I dont have to make dinner each night. So off to pinterest I went to try and find low carb casserole (not with very high expecations btw). Well, I found a few things but this was the one we tried first and it was super yummy. Now, this is not something you probably want to eat a lot, especially if not everyone in your house is doing low carb, but it was easy, yummy, and make 6 large servings, so it was a win in my book.
However, the recipe I found had an ingredient I had never heard of in it and were missing part of the instructions (can be found here), plus they had a link to the original recipe that they tweaked (can be found here), so I kinda combined the two together so I wanted to blog about it so I could pin my version so I remember when I make it again, plus to share it with the world (with better pictures), cause it really was good.
Ingredients:
1 lb ground turkey
**could use beef, we just use turkey here)**
6 kosher hot dogs, sliced in rounds
**look for ones with only 1 carb per dog**
1 small onion, diced
2 t yellow mustard
1 can no bean chili
8 ounces shredded cheese
2 eggs
1/2 c mayo
1/4 c whole milk
**can also use heavy cream**
Lets make it:
PREHEAT OVEN TO 350 DEGREES.
Brown the turkey and onion together in a large pan.
Once browned, stir in the sliced hot dogs, chili, and mustard until combined.
Pour mixture into lightly greased 9x13 pan and top with half the cheese.
In a separate bowl beat the eggs, then add in the mayo until blended, then add in the milk until blended.
Pour over meat mixture in pan and then top with the rest of the cheese.
Bake for 30 minutes and then enjoy!!
